Why is it that in almost every game, someone says we need to get to their QB and hit him continuously. I think it's pretty much a given that you always need pressure on the QB. Or are there games where we should leave 8 guys in coverage in every snap?

Depends on the quarterback. I would say a large percentage of QB's you do no want to give them time, however, some of them, the more time they have, the more likely you'll catch their passes on defense.
