For tall trees, I'd try to get a bucket truck, cut it from the top down in chunks. Dunno man.
They do, but they work on scheduled line clearance plans for entire runs/areas/neighborhoods. Typically 3 to 4 year intervals. They cut only the limbs that they determine are a hazard, or they believe will become a hazard by the time of the next scheduled line clearance.

Sadly, that bid isn't outrageous from my perspective, but that is largely because it's in keeping with what I'd expect around here where I live. Hopefully your next bids come in lower. Please post the subsequent bids and we can all discuss a strategy moving forward if you want.

The guy who came out said he could tell the tree was trimmed fairly recently. I've lived there for about 9 months so I'm assuming fairly recently likely means 1-3 years.

Absolutely. I've already decided that Tree's B and C do not need stump removal, and I might just say screw Tree C and do it myself. That will save me about $550 right there or bring my total down to $4,700 before taxes. He said if I pay cash, no tax then. So, yeah, I will be paying cash, lol.
My concern is the debris haul cleanup is $1,000 for the five trees. I want to believe I could do this myself, but at what point am I putting too much time and effort into getting rid of the debris? Also, I'd have to find a place to take it and so far each place wants money. So in the end I could be pissing away a couple weekends to only end up saving about ~$500 and I have to figure out if that is worth it or not.

If you go cash cash, I'd want a better price than merely knocking the taxes off.
You can run the "I'm paying straight cash brother, so I'm thinking x for this job out the door" shtick by all bidders, in addition to the allusions about the other bidders. I wouldn't do any of that until you get all your estimates and impressions from the various companies. I roll like your dad, 😆

Just make damn sure it would still be covered insurance/liability-wise. There are so many factors at play with tree care that you absolutely need multiple estimates.
Equipment to do the job, cost of that equipment, labor intensity, etc etc etc. Fortunately, yours is not a high priority need, so you and your contractor have time flexibility. 3 bids sounds like a good plan.

Until I get third quote, this is basically what I'm thinking. One place take care of two trees and all stumps. The other place take care of chopping down and hauling crap away. Just over $4,000.
I really wish I could just take care of the damn debris myself. But unless they cut it up for me, I be screwed homie!
